Croft was – and is – an important Port house, and one of the oldest, being established in 1678 (although established in York in 1588). John Croft, from York, joined in 1736 and the firm became known as Croft & Co.
The Gilbey brothers, wine merchants in London, who bought Sherry from Gonzalez Byass, had enjoyed success with their Invalid & Triple Crown Port brands, supplied by Croft, and to guarantee future supplies, bought half the shares in Croft in 1892, and the rest in 1911 on the death of John Frederick Croft.
They went on to merge with United Wine Traders in 1962, forming IDV with brands such as J&B, Smirnoff and Baileys (later became Diageo).
In the late 1960’s, they noticed Sherry drinkers thought dark Sherry was sweet and pale Sherry was dry. It was also more up-market to be seen drinking dry Sherry. So they created a pale sweet Sherry - Croft Original Pale Cream.
Croft Jerez SA was constituted on 25th May 1970 but the end of the 1970’s saw the beginning of a long decline in sherry’s popularity
At the end of the 1990’s, Diageo sold Croft to Gonzalez Byass

Tasting notes
Croft Particular shows a pale gold bright colour. A refined sherry with a light crsip taste, medium dry sweetness and an elegant nutty finish. Croft should be served chilled between 4º and 6ºC in a small white wine glass. Perfect with white meats, fresh fish and mature cheese.

Vinification details
The first press of Palomino grapes is fermented to between 11% and 12% alcohol before being fortified to a further 15.5%. Once within the Croft solera, the combination of alcohol, temperature and humidity helps the formation of a layer of “flor” (yeast) on the surface of the wine. This flor protects the wine from oxygen and gives it it’s unique aroma and character. Following 2 years ageing under flor, concentrated wine must and wine alcohol is added to sweeten and protect this wine. It is then aged as a sweet wine in American oak casks for a further year.
