Focaccia panini with tomato, mozzarella, grilled pepper & basil pesto
Ingredients
2 Focaccia panini
1 Beef tomato
1 Ball fresh mozzarella cheese
Grilled pepper slices
Fresh basil pesto
Extra virgin olive oil (for drizzling)
Salt & black pepper to taste
Method
1. Warm the focaccia panini
Follow on-pack instructions to heat 2 focaccia panini until toasted and fluffy.
2. Prepare the filling
While the focaccia panini are still warm, generously spread basil pesto on both halves of each bread roll and top with fresh mozzarella.
3. Add tomato & peppers
Layer tomato and grilled pepper slices over the mozzarella. Top with a few fresh basil leaves.
4. To finish
drizzle everything with good quality extra virgin olive oil. Add a pinch of salt and a twist of black pepper if desired.
5. Slice & serve
Slice and serve immediately while warm.
