Place in a hot dry frying pan for 1 minute on each side or put into a pre-Heated oven at 180°C for 3 minutes. Then add toppings, fold, slice and serve.

Piadina emiliana with red pesto, stracciatella & chargrilled aubergine
Ingredients:
2 Piadina Emiliana
Fresh red pesto
150g stracciatella cheese
Chargrilled aubergine
Fresh basil leaves
Extra virgin olive oil (for drizzling)
Salt & black pepper to taste
Method:
1. Warm the Piadina
Follow on-pack instructions to heat 2 Piadina until soft and flaky.
2. Prepare the Filling
While the Piadina are still warm, spread red pesto on one half of each Piadina.
3. Add Stracciatella & Aubergine
Layer dollops of stracciatella and chargrilled aubergine. Top with a few fresh basil leaves.
4. To finish
Drizzle everything with good quality extra virgin olive oil. Add a pinch of salt and a twist of black pepper if desired.
5. Fold & serve
In true Italian style, fold the Piadina and cut in half. Serve immediately while warm.
