Serves 4. For a tasty curry, combine 1 jar of curry paste with either one 400 ml can of coconut milk OR chopped tomatoes. Simmer till thickened. Add 650g of boneless chicken thighs cut into chunks. Cook thoroughly until tender. For a delicious vegan option, substitute chicken for vegetables, tofu or tempeh. If using tougher cuts of meat like stewing steak or lamb, add 1 cup of water and cook till tender. Perfect for slow cookers. Can be used as a marinade to transport your typical BBQ to Malaysia! Elevate Coronation chicken with a couple of cheeky spoonfuls added to some mayonnaise.
