Davidstow is a real village in North Cornwall (located between Padstow and Bude), from which the creamery is proud to take their name.
They have been perfecting cheese here for over 70 years, since the creamery first sprung to life on a former WW2 RAF aerodrome.
To get the great Cornish milk that goes into all Davidstow cheese, requires three key things -

Having the right cows plays a huge part in achieving the perfect quality of milk, rich in butterfat and protein.

The herd needs a nutritious, balanced diet to produce consistently top quality milk for our Davidstow recipe.

Ingredients:
- 200g Davidstow Classic cheddar cheese, grated
- 150g Mozzarella, roughly chopped
- 150g Gruyere, grated
- 2 tbsp cornflour
- 100ml Cornish Cider
- 1 clove of garlic, grated
- 1 tsp Dijon mustard
- ½ tsp grated nutmeg
Directions:
- Start by grating all your cheeses and toss with the cornflour in a bowl. Then in a fondue pot or saucepan heat the wine and garlic on a low heat.
- Add the cheese a little at a time, stirring well and then once smooth add mustard and nutmeg.
- Serve an assortment of bread, fruit and vegetables with fondue forks or skewers. Dip and enjoy!
