Preparation and Usage
FOR PERFECTLY COOKED VENISON & PHEASANT, OUR HEAD CHEF RECOMMENDS: CASSEROLE Preheat oven to 170°C (160°C fan/gas mark 3). Toss in a little seasoned flour. Heat oil in a casserole dish and fry over a medium heat until well-browned. Add seasonal vegetables and cook for 5 minutes. Add 400ml of good stock, some wine and cover. Pop in the oven and cook for 2 hours or until the meat is tender. You may need to top up liquid during cooking if required. Perfect with a handful of fresh herbs scattered over the top before serving.
