Del Suelo Espadín Artesanal Mezcal is a dry mezcal tequila with mineral flavours and notes of citrus, orchard fruit and spice. Our Espadín mezcal starts with aromas of orange zest, peppercorn and dill. Our mezcal begins its journey in the rugged mountain terrain of San Luis Del Río, where the agave plants, nurtured by the rich, mineral-laden soil and the intense heat of the sun, grow to maturity over many years. Once fully mature these plants become the soul of our mezcal, each one harvested by hand. The heart of the agave, the piña, is then slowly roasted in stone-lined earthen pits, a method that dates back centuries. This process unlocks the rich, smoky flavours and the sweet, earthy aromas that define our mezcal. The caramelised piñas then go on to be crushed using ancient techniques to ensure a gentle extraction of the agave juices. The fermentation of the crushed agave relies on the wild yeasts present in the air making each batch of mezcal a unique expression of its immediate environment. Finally, our mezcal is double distilled in copper stills and the fermented liquid is refined into a mezcal that is smooth, complex and distinctive.
