Preparation and Usage
Place the pasta into a medium pan of salted boiling water (no need to pull them apart, they will separate naturally during cooking). Reduce the heat and boil gently for 4 minutes before draining into a colander. To make the most of the fantastic flavours add a knob of butter (or drizzle of olive oil) to the warm empty pan, return the pasta to evenly coat with the butter or oil, and then add some grated Parmesan and a pinch of black pepper. Serve onto pre-heated plates or bowls and garnish with a spring of fresh coriander or parsley. Serves 2

Serves 2
1/4 Red Chilli Deseeded and Diced
6 Cherry Tomatoes Halved
2 tbsp Lime Juice
4 tbsp Olive Oil
1 tbsp Chopped Coriander
Quarter of an avocado peeled and cut into small pieces
..With Chilli and Avocado Dressing
Warm the chilli, lime and olive oil in a saucepan. Add the tomatoes and coriander, stir for a few minutes then remove from the heat and cool slightly. Then add the avocado and drizzle over the raviolis.
Serves 2
500ml Chicken Stock
5g Chopped/Grated Ginger
1 Clove of Garlic
1/2 Red Pepper cut into small strips
1 tbsp Soy Sauce
1 tsp Thai Fish Sauce
1 tsp Sesame Oil
1/4 Red Chilli Chopped
2 tbsp Chopped Coriander
50g Baby Spinach Chopped
...With a Ginger & Chicken Broth
Bring all the ingredients to the boil in a pan except the spinach and coriander. Simmer for about 10 minutes then remove and add the coriander and spinach. Fill a large bowl with the broth and float a few of the raviolis (cooked) into the broth.
