In times gone by buckwheat, fagopyrum esculentum, has been called sarrasin and black wheat due to the black outer casing of the triangular seeds.
Buckwheat is a member of the rhubarb family which ripens in late autumn. It is a traditional food in Russia where it is known as kasha, as well as featuring in dishes from Northern China, Tibet and Europe.
The flour has a calico colour and natural sweetness which can impart a pleasing flavour to noodles, pancakes, pasta and home baking.
Baking with Buckwheat Flour
Buckwheat flour is well suited to cake and biscuit baking.
For bread baking combine buckwheat flour with a strong bread flour.

Get the french brand. This is just normal flour.
Light colour and subtle tasting, makes a delicious banana bread! Very versatile flour, so glad I gave this brand a go!
This flour is excellent in baking wheat free cakes, waffles, muffins etc. I have a lot of recipes that call for white buckwheat flour and I believe that I have found it.
good for pancakes
We have used many different types of buckwheat flour for our pancakes and we really like this one. It has a light color, so the pancakes dont turn out grey, like many other darker types. The flavor is mild and it is very finely ground, so that it blends well.
Worst purchase ever!
I bought this Dove Farm Buckwheat recently and I am appalled at the quality. It says on the packet stoneground wholegrain Buckwheat flour. This has definitely been refined. I grew up eating wholegrain Buckwheat flour and I am certain this is not unrefined stoneground wholegrain Buckwheat which it claims to be. This is misleading to the customer. Very unhappy about it. I have in the past ordered Buckwheat flour from the French brand, Reflects de France which is wholegrain Buckwheat flour and far superior to Dove's farm. It was out of stock and that is why I ordered Dove Farm Buckwheat Flour. Compared to Reflet de France Buckwheat Flour, this is refined, bland tasting flour almost like plain flour with little of Buckwheat nutty flavour. It is much paler colour compared to the usual Unrefined Buckwheat Flour that I use. If you are looking for a proper unrefined stoneground wholegrain Buckwheat flour,then I would go for the French brand not Doves farm. I am very disappointed.
White buckwheat flour
I understand from the reviews that the supplier changed the product. This is the whiter variety of buckwheat flour without the black flecks. I prefer it for my pancakes recipe.
