Our succulent 1.7kg Rib Roasting Joint is butchered, trimmed and rolled by hand from the rib. We only use British ex-dairy beef, working closely with our farmers to source cattle that have spent four to five years producing milk before joining our beef programme, typically reaching 60 to 72 months old by the time they come to us. Every carcase is hand-selected by our butchers for finished quality, judged on both fat coverage and muscle conformation, so only the best makes it onto our block. Naturally better marbled than leaner cuts, the result is a tender, succulent joint with a deep, rounded flavour throughout.
Choosing ex-dairy beef is also a more considered choice. These are cattle that have already lived long, well cared-for lives on pasture-based dairy farms – first producing milk for four to five years, then reared mostly on grass (with some grain finishing) before coming to us. Rather than rearing cattle from birth purely for beef, we make full use of the whole life of the animal, meaning less waste and a genuinely more sustainable way to enjoy beef this Christmas.
We work closely with the farmers we source from to make sure every animal is well cared for throughout, from dairy production right through to finishing.
For best results, roast to your liking and allow to rest well before carving into thick, juicy slices.

Storage
Keep refrigetated 0-5°C. Once opened use within 24 hours. Do not exceed the use by date. Suitable for freezing. Freeze on a day of receipt. Once defrosted, do not re-freeze.
Preparation and Usage
Oven cooked from chilled. Allow meat to rest in room temperature 30 minutes before roasting. Pre-heat oven to 230°C / Fan 210°C / Gas Mark 8. Remove all packaging and pat the meat dry with paper towel and score the fat. Season with salt and pepper. Place the joint in a roasting tray and out in a centre of the oven for 15 minutes. Reduce the heat to 180°C / Fan 160°C / Gas Mark 4 and cook for 20 minutes per 500g. Remove from oven and allow to rest for 20 minutes in warm place prior to carving.
