Recipes

Chilli Cornbread
Serves 4

2 eggs, 450ml Butter milk or Natural yogurt, 50g Butter melted, 65g Plain Flour, 1 tsp Bicarbonate of Soda, 2 tsp Salt, 275g Dunn's River Fine Cornmeal, 2 Red Chillies; De-seeded and very finely chopped, 200g can Sweet corn and Peppers, drained. Whisk the eggs in a large bowl until frothy, then whisk in the buttermilk or yoghurt and melted butter. Sift the flour, bicarbonate of soda and salt together and gradually stir into the egg mixture. Fold in the Dunn's River Fine Cornmeal followed by the chillies and sweetcorn. Pour the mixture into a greased and lined 23cm square cake tin and bake in an oven preheated to 200C (400F/Gas 6) for 25-30 minutes. Allow to cool for a few minutes., then turn out and cut into squares. Serve warm.
