Recipe for Lucknowi Shammi Kebabs
(Mouth watering Lamb Kebabs)
Boil 1/2 kg minced leg of lamb with 150g East End Chana Dall in 2 cups of water until the chana dall are done. Remove from heat and drain all the water. Let the mix rest for an hour. Add the lamb and chana dall to a blender and blend to form a thick paste. Add 2 beaten eggs, 1tsp East End Ground Black Pepper, 2tsp East End Ground Black Cardamoms, 1tsp East End Ground Cumin and salt to taste. Add 1/2 onion (very finely chopped) and 2 chopped green chillies. Add 1/2tsp East End Red Chilli Powder and 1tsp lemon juice. Mix well and let the mixture rest for 4 hours. Make small balls from the mixture and flatten into round patties. Deep fry in oil until golden brown on both sides. Serve with coriander sauce, raw onions and sliced lemon.
