Ready to eat:
These little fellas are already cooked and ready to be enjoyed.
Just give them a rinse in a colander.
Beetroot bean burger:
Mix 1 can mashed butter beans, 140g cooked quinoa, 150g grated raw beet, 1 tsp cumin, 1/2 tsp smoked paprika, 65g crushed walnuts. Separately, cook 1 diced onion and 75g diced mushrooms in oil. Combine all into six patties.
Bake at 190°C fan for 30-40 mins.
Raspberry bean brownies:
Blitz together 45g ground oats, 1 can butter beans, 60ml coconut oil, 115ml maple syrup, 2 tsp vanilla extract, 2 tbsp cocoa powder, 1/2 tsp baking powder and 1/4 tsp salt until smooth. Fold in 80g dark chocolate chips. Move to tin, top with handful of raspberries.
Bake for 15-18 mins, 180°C fan.
Butter bean tomato curry:
Cook 1 diced onion and 1 chopped garlic clove in a tbsp oil until soft.
Add 2 tsp garam masala, 1 tsp cumin, 1 tsp paprika and stir. Add 1 can chopped tomatoes, 200ml vegetable stock, 1 can butter beans and stir. Simmer for 15 mins until thick.
