Our wines are made by traditional winemaking methods. Once the wine is fully fermented, we use a gentle vacuum distillation process to remove the alcohol. By lowering the boiling point of the alcohol to approximately 30°C, we can extract the alcohol without "cooking" the wine, ensuring that the delicate varietal aromas and characteristic flavours are preserved.

Our state of the art equipment ensures a smooth and gentle de-alcoholization while preserving the character of the wine. Grape must is added after de-alcoholization to ensure balance in the final wine.
