Jamaican Ginger Cake
Moist, rich, and infused with fiery ginger and sweet syrup, this Jamaican ginger cake is pure comfort. Perfect with a cup of tea or enjoyed on its own.
Prep time: 30 minutes
Cook time: 1 hour
Serves 20 people
INGREDIENTS:
380g Self-raising flour
1 tbsp Ground ginger
2 tsp Ground allspice
200g Unsalted butter, softened and chopped
250g Dark Muscovado Sugar
3 Eggs, lightly beaten
2 stems Epicure Stem Ginger In Syrup, chopped
250ml Sour cream
60ml Milk
200ml Epicure Date Molasses
FOR THE GINGER ICING
180g Icing sugar
1½ tsp Ground ginger
Ginger biscuits, crushed
METHOD:
Preheat oven to 160°C. Grease two loaf tins and line with baking paper. Standard 2lb loaf tin (also referred to as a 900g loaf tin) typically measures around 23cm x 13cm x 7cm (9" x 5" x 3")
Place 200g butter and 250g sugar in the bowl and using an electric whisk beat until thick and pale. Add the 3 eggs and beat to combine.
Next add the chopped ginger, 250ml sour cream, 60ml milk and 200ml molasses and stir to combine, before folding in the 380g flour and spices (1 tbsp ground ginger and 2 tsp ground all spice.
Divide the cake batter into the two prepared loaf tins and bake for 50-55 minutes until a skewer inserted in the centre comes out clean. Set aside to cool completely in the pan. If you only have one tin, bake in two batches. Cover your cake mix in the bowl with cling film whilst baking.
For the ginger icing, sift the icing sugar and ginger into a bowl and gradually add a tsp of water at a time, stirring until well combined and smooth pourable consistency.
Turn out your cake and allow it to cool on a wire rack. Drizzle the icing on top generously, sprinkle over crushed ginger biscuits and slice to serve.
TIP:
This recipe makes two loaves. You can easily freeze this cake for up to three months without icing. Feed lots of hungry mouths or keep one for a later date.
