Epicure Whole Potatoes in Water

Spicy Bombay Potatoes sandwiched between buttery garlic crumpets and topped with a crispy fried egg. It is as delicious as it sounds, and easy peasy to create!

INGREDIENTS:
1 tbsp olive oil
1 Tin Epicure Peeled Whole Potatoes in Water, halved
5 on the vine tomatoes, quartered
1 tsp cumin seeds
1 tsp Epicure Chopped Garlic
1 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
1 tsp chilli powder
salt, to taste
General:
2 eggs
4 crumpets
40g butter
1 tsp Epicure Chopped Garlic

1 small bunch of coriander, chopped
Grated parmesan

Preheat the oven to 200°C.

METHOD:
Heat the oil in a frying pan over a high heat and add the cumin seeds. Fry for 30 seconds or so before adding the garlic.
Add the potatoes, tomatoes, turmeric powder, coriander powder, chilli powder, garam masala & salt. Toss well to make sure everything is coated.
Transfer the Bombay potato mix to a tray and roast for 20 minutes. Remember to toss the potatoes halfway through cooking
Whilst the potatoes are cooking, make a garlic butter by mixing the butter, garlic and chopped coriander together.
Just before the potatoes are ready, fry two eggs on a high heat so the bottom is nice and crispy.
Toast your crumpets, slather on the garlic butter and stack alternately the crumpets with the Bombay potato mixture. Top with the crispy fried egg and finish with a little grated parmesan. Enjoy!

Tip:
Bombay Potato Mix can be cooked in an air fryer: 180 degrees for 15-20 minutes. You could also try serving potatoes in a wrap for a quick and easy lunch.
