Pear, Rosemary & Honey Galette

Cook Time: 30 minutes
Serves 8 people
INGREDIENTS:
For the crust:
230g Plain flour
¼ tsp Salt
45g Granulated sugar, plus 2 tbsps for sprinkling
115g Unsalted butter, cold and diced
60ml Water, ice cold
1 egg, beaten
For the filling:
2 tins Williams Pear Halves in Fruit Juice, drained
2 tsp Fresh rosemary, chopped
60g Epicure Acacia Honey
80ml Water
50g Ground hazelnuts
METHOD:
In a bowl, whisk the flour, sugar, and salt together. Add the diced cold butter until the mixture is a coarse crumb. Add the ice-cold water, and gently knead the dough a few times until it all comes together.
Shape the dough into a ball and flatten it into a thick disk. Wrap it in cling film and refrigerate for 1 hour.
Preheat the oven to 200C, and line a large baking tray with baking paper.
For the syrup, pop the honey, water, and rosemary into a small saucepan over medium heat, for about 10-15 minutes. Stir as the honey dissolves and thickens. Whilst the syrup is cooking, slice the pears.
On a lightly floured surface, roll the dough into a 30cm circle. Trim the rim of the circle to make a clean cut. Transfer the dough to the prepared baking tray and spread the ground hazelnuts onto the crust, leaving a 5cm border all around.
Display the pear slices on top, and gently brush the rosemary honey syrup all over the pears.
Gently fold the edges of the dough over the pears, overlapping the dough as necessary. Press to seal the edges. Brush the crust with the beaten egg and sprinkle the granulated sugar on top.
Bake for 30 to 35 minutes, until the crust is golden brown. Remove from the oven and allow to cool slightly before serving with thick cream or ice cream.
TIP:
Also good cold, served with a dollop of Greek yoghurt.
