Made from the the herbaceous milk of sheep and goats grazing mostly in the richly biodiverse Epiros region, which has its own unique flora. Cheese making is traditional to the area. The rugged mountainous terrain is unsuited to agriculture but perfect for rearing sheep and goats. This is an aromatic, dense feta, not overly salted and excessive of the quality of the milk.
