Preparation and Usage
Cranberry, White Chocolate & Buttermilk Scones: Makes 8-10 scones
Sieve 350g soda bread self-raising flour & 1 tsp baking powder into a bowl with 25g caster sugar. Add 50g cold butter, cubed and rub in until mixture resembles breadcrumbs.
Add 75g whole dried cranberries, 75g white chocolate drops & 185ml buttermilk to mixture and lightly knead to a firm but soft dough.
Roll dough to approx. 1 inch thick on a lightly floured surface. Using a 3 inch round cutter cut out scones. Place on a floured baking tray, brush tops with buttermilk and bake in a pre heated oven at 200ºc for 12 - 15 minutes until the scones are golden brown. Allow to cool on a wire rack, before serving with cream and jam.

Cranberry, Coconut & Lime Balls
Finely chop 100g cranberries, add 100g desiccated coconut, 120g ground almonds, 60ml coconut oil, 30ml maple syrup and the grated rind and juice of a lime. Bind the mixture together in a blender. Roll into 12 balls, coating with a little extra coconut. Store in an airtight container.
