You will need
1 Medium egg
110ml semi-Skimmed milk
45ml vegetable oil
6 Muffin cases
Equipment
Muffin tray electric hand whisk
Instructions
1 Preheat oven to 180°C/160°C Fan/Gas mark 4. In a jug, mix the egg, milk & oil.
2 Place the Fuel 10K Blueberry Muffin Mix into a bowl, pour in the egg, milk and oil and gently mix. Whisk for 1 minute until smooth and creamy.
3 Spoon the mix evenly between 6 muffin cases. Bake in the centre of the oven for 16 to 18 minutes or until a skewer the centre of the muffins comes out clean. Cool on a wire rack.
Top tip!
Suitable for freezing. To eat; thaw then microwave for 10 seconds. Decorate with crème fraîche and blueberries for a sweet finish!
