Serving suggestions
An ideal aperitif, this versatile wine also pairs wonderfully with light appetizers, seafood, poultry, salads, and pasta dishes. Its freshness also complements Asian cuisine.
Winemaker
The grapes are sourced from high-altitude vineyards in the Peloponnese region; Moschofilero from Arcadia and Roditis from Corinth.
Each variety is vinified separately in stainless steel tanks at cool temperatures to preserve their fresh, aromatic characters. The wine does not undergo malolactic fermentation, which helps maintain its crisp style. The final blend is expertly crafted to achieve a perfect balance.
Vinification details
The carefully selected grapes were chilled to 4°C before being destemmed and pressed. Each variety was vinified separately with selected yeasts in stainless steel tanks at 16°C, to preserve the varietal characters. Only the free-run must was retained from the Roditis grape variety. The Roditis, Moschofilero and Assyrtiko wines were expertly blended to create a wine with perfect balance.
