Grapes were night harvested to the protect the delicate Sauvignon Blanc flavours. On arrival at the cellar the grapes get pressed in a reductive style, with minimum oxygen exposure. The essence is to protect the delicate flavours of the Sauvignon Blanc that nature has so graciously provided us with. After fermentation, a splash of Grenache adds delicate floral and strawberry notes.
