In order to keep all the organoleptic, physicochemical and sanitary qualities, they shall not undergo too high temperature changes. Important rises in temperature accelerate the ageing and can lead to significant damages. (loss of colour, mould, …)

Pure crushed on ice or in cocktails. Try the "Aviation" cocktail created by Hugo R. Esslinn, Wallick Hotel, New York in 1916.
>Ingredients:
45 ml Gin
15 ml Giffard Maraschino Liqueur
10 ml Giffard Crème de Violette (Violet)
15 ml lemon juice


>Preparation:
1. Add the ingredients to a shaker
2. Ice up 2/3 of the shaker with cubed ice
3. Shake vigorously for 7 to 10 seconds
4. Strain into a chilled glass (coupe) with no ice
5. Garnish with a cherry & serve
