After destemming, the grapes are cold macerated for five days in open top stainless steel tanks and fermented with native yeasts. After primary fermentation, the wine is macerated with its skin for another ten days to achieve greater smoothness and intensity of flavours. Finally, the wine is racked to neutral oak barrels and aged for 8 months.

The solera of Del Duque began in 1835 when the Duke of Medinaceli purchased 16 sherry butts. This Amontillado Muy Viejo has more than 30 years of ageing in oak barrels giving it an intense concentration and complexity. Dry in taste with hints of cedar, leather, walnuts and a lingering, nutty finish. It is a great partner for roast beef, hearty casseroles, game or mature Cheddar cheese.

Regional information
Gonzalez Byass is situated in the city of Jerez, Andalusia, in the heart of D.O. Jerez. Owning over 800 hectares of vineyard, all situated in Jerez superior. This area enjoys a warm and humid climate which helps in the maturation of the grape. The soils of the area are high in chalk, known as 'albariza soil' this helps to maintain moisture during the long dry summers. With vineyards split 95% Palomino and 5% Pedro Ximenez, Gonzalez Byass is the only winery to have PX planted in Jerez.

Vinification details
As soon as the Palomino grapes reach the winery they are gently pressed, the lightest, finest juices from the first pressing go into Del Duque. After fermentation in stainless steel tanks the wine is fermented to 15.5% whereupon it enters the Tio Pepe Solera. Here it ages for 4 years before moving into the Vina AB solera, during a further 4 years the flor begins to die and the wines ages oxidatively turning into an amontillado. It then moves to the Del Duque solera for a further 22 years of ageing.
