Coconut Banana Bread
Serves 8 - Prep 15 mins - Cook 1hr
Ingredients
3 ripe bananas
5 medium eggs
4 pitted dates (mashed)
2 tps vanilla extract
60ml The Groovy Food Company Organic Virgin Coconut Oil melted
1/2 tsp ground cinnamon
2 tsp baking powder
70g The Groovy Food Company Organic Coconut Flour
2 tbsp chia seeds
Method
Preheat oven to 160°c and line a loaf tin with baking paper.
Mix all ingredients in a food processor, and pour into a tin.
Bake for approx 50-55 mins or until skewer comes out clean and the top is golden brown.
Cool before serving.
Lemon & Poppy Seed Muffins
Serves 12 - Prep 15 mins - Cook 20 mins
Ingredients
60g The Groovy Food Company Coconut flour
110g olive oil
4 large eggs
60ml The Groovy Food Company Organic Agave Nectar
60ml lemon juice
3 tsp poppy seeds
Zest of 1 lemon
1 tsp baking powder
1/2 tsp salt
Method
Pre-heat oven to 180°c and line your muffin tray with cases.
In one bowl combine the olive oil, eggs, agave, lemon juice and zest.
In another bowl combine the coconut flour, baking powder and salt.
Add the dry ingredients to the wet in two batches and mix well. Add the poppy seeds and stir through.
Distribute the batter amongst 12 muffin cups.
Place in oven and bake for 20-22 mins. Remove and allow to cool.

Can\x27t make pancakes, they fall apart
I was looking for gluten free flour to make pancakes. It says it can be used for pancakes but it's not the right consistency to do so. They fall apart. Shame

This organic flour makes beautiful bakes
So far I've made gorgeous cookies and little cupcakes and they're heavenly. So light. If you use coconut oil in your recipe you get a beautiful subtle hint of coconut in the cakes

Help!
Tastes lovely but I failed to make a pancake using this without eggs. Does anyone have an egg free pancake recipe combining coconut flour?!
