Cooking guidelines
Hob - From Ambient. Heat chips in top of double boiler over hot (not boiling) water. Stir constantly until smooth.; Microwave - From Ambient. Heat chips in a microwave safe bowl at medium power (50% or level 5) for 2 minutes. Stir until bowl no longer feels warm. Continue heating for 30 second intervals, stirring until smooth.

Peanut Butterscotch Crispies
The combination of butterscotch and peanut butter is hard to resist especially with the added crispiness of the the cereal and peanuts. Makes 16 two-inch squares.
2 Cups (12 ounces) Guittard Butterscotch Baking Chips
6 tablespoons peanut butter (creamy or crunchy)
3 Cups crispy rice cereal
3/4 cup roasted peanuts (salted or unsalted)
Line the bottom and sides of an 8x8-inch pan with plastic wrap so it hangs over the edges for easy lifting when done. Set aside. Combine butterscotch chips and peanut butter in a large microwave safe bowl. Heat at medium power (50% or level 5) for 2-2 1/2 minutes, stirring well after one minute initially then at 30 second intervals until smooth and chips are completely melted. Gently stir in cereal and peanuts, without crushing cereal, until evenly coated. Spread into prepared pan. Refrigerate for about 15-25 minutes or until set firmly enough to lift contents out of pan. Cut into squares. Store covered at room temperature. Squares can be individually wrapped for treats on the go.

2-1/2 Cups unsifted all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
1/2 Teaspoon vanilla extract
2 cups (12 ounces) Guittard Butterscotch Baking Chips
Preheat oven to 375°F. Line cookie sheets with parchment or use ungreased. In a small bowl combine flour, baking soda and salt; set aside. In a large bowl cream butter and sugars until light. Beat in egg and vanilla until smooth. Gradually add flour mixture until combined. Stir in chips. Drop rounded teaspoonfuls onto cookie sheets. Bake about 10 minutes or until golden brown around edges. Cool for several minutes on cookie sheets before transferring to racks to cool completely. Store in airtight container.
