Cooking guidelines

Hob - From Ambient. Heat chips in top of double boiler over hot (not boiling) water. Stir constantly until smooth.; Microwave - From Ambient. Heat chips in a microwave safe bowl at medium power (50% or level 5) for 2 minutes. Stir until bowl no longer fills warm. Continue heating for 30 second intervals, stirring until smooth.

Choc-Au-Lait™ Peanut Butter Cookies
Traditional peanut butter cookies with gourmet white chips. Makes 4 dozen 2-inch cookies

1-1/2 cups unsifted all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chunky peanut butter
1/2 cup (1 stick) butter, softened
3/4 cup firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups (12oz) Guittard Choc-Au-Lait™ Baking Chips

Preheat oven to 350°F. Line cookie sheets with parchment.

In small bowl combine flour, baking soda and salt; set aside. In large bowl cream peanut butter, butter and brown sugar on medium-low speed until light. Beat in egg and vanilla. Gradually add flour mixture until combined. Stir in chips.

Drop rounded spoonfuls onto lined cookie sheets. Flatten tops of cookies with tines of fork forming a criss-cross pattern. Bake 10-12 minutes or until golden brown and slightly soft in the center. Cool on racks; cookies will harden as they cool.

Choc-Au-Lait™ Fudge
A creamy white fudge when you want a change from chocolate. Makes 63 one-inch squares
1-1/2 cups sugar
1 tablespoon light corn syrup
3/4 cup evaporated milk
1/2 teaspoon salt
2 tablespoons butter, cut into 1/2 inch cubes
2 cups (12oz) Guittard Choc-Au-Lait™ Baking Chips
1 teaspoon vanilla extract
1 cup coarsely chopped walnuts

Butter a 7 x 9 x 2-inch pan or line with foil.

Combine sugar, corn syrup, evaporated milk and salt in a saucepan. Bring to a boil over medium heat. Once the mixture begins to boil, time for 10-11 minutes, or to the thread stage, or to 225°F on a candy thermometer.

Remove from heat and add butter and chips, stirring vigorously until melted and smooth. Mix in vanilla and walnuts. Pour into prepared pan. Cool in refrigerator at least 1 hour before cutting into 63 squares.
