My great grandfather started smoking the 'king of fish' in London's East End in 1905, making us the world's oldest producer of Smoked Salmon. As it was then, so it is now. We still prepare our world famous Smoked Salmon totally by hand in our family smokehouse. We begin with the freshest, best grade Scottish salmon within hours of it being landed. We cure only in pure rock salt and cold-smoke very lightly using whole oak logs.
Our sashimi-grade Royal Fillet is the finest cut of our smoked salmon; the piscatorial equivalent of a fillet of beef. Each and every pin-bone is painstakingly removed by hand allowing this skinless fillet to be sliced into sashimi-style slices to your desired thickness. Our Royal Fillet is ready to eat but equally, can be seared or charred for a matter of seconds for a melt-in-the mouth experience like no other.
I personally guarantee that every mouthful you enjoy will be of the same sashimi-grade quality we supply to Michelin Star Chefs.
