Fillet steak: A celebration of laziness. This is the muscle that does the least amount of work, resulting in luxuriously tender steak.
We recommend: Medium rare
“Excuse me while I get moist-eyed: Hawksmoor filled a yawning gap in our culinary life. One of my favourite restaurants of the last 10 years.” Jay Rayner, Observer
The key to great steak is happy cattle. Since we opened our first restaurant in 2006, we’ve been working with passionate farmers across Britain doing things the old-fashioned way. Slowly, carefully, always focusing on the health and happiness of the animals and the land on which they graze. We believe that animal welfare, sustainable farming and supporting independent farmers are not just the right thing to do – they’re as close as you can get to a guarantee of great tasting beef.
From our network of passionate farmers this traditional breed British beef is exactly the same as we serve in our restaurants in London, Manchester and Edinburgh.
Beef, salt, heat. When it’s as simple as that the beef really has to be the best there is.
“Flawless. The best steak you’ll find anywhere.” Giles Coren, The Times"

Preparation and Usage
If the weather allows, grill on the barbecue over white hot coals. If not, use a cast-iron griddle or heavy-gauge frying pan and get very hot (if using a frying pan add a nugget of beef dripping). Season generously with Maldon sea salt just before cooking and turn the steak regularly until it forms a delicious dark golden brown crust. Use a temperature probe to hit your desired cuisson (guideline temperatures included on packaging).

delicious (but expensive) treat
The quality is superb. Melt in the mouth, tasty steak. Very expensive (albeit worth it!) so only an occasional treat.
YUM!
Quite the best fillet steak around. Enjoyed multiple times and not had a complaint yet. Pricey but worth it.
Tasteless
Bought 2 whilst on Offer . Quite simply tasteless nor particularly tender . If I still had my dog he'd have taken a different view .
unbelievable not enough stars
Absolutely perfect this fillet steak was, Hawksmoor didnt disappoint- melted in the mouth , juicy, tasty piece of fillet steak. Its definitely worth treating yourself. Cooked in a Dry frying pan, I seasoned the steak added it to a red hot frying pan 4 mins either side! Utterly delicious
Hit and miss
I bought one of these steaks a few weeks ago as a treat and it was all you'd hope for in a fillet steak - a real melt-in-the-mouth texture, beautiful flavour and centre-cut, as the details describe. Noticing they were on offer this week, I bought two more. One of these looked to be centre-cut in the vaccum pack but the grain was weird when freed from the plastic and the steak turned out to be very chewy/sinewy?? The second one is tail-cut, no question of that given its obvious wedge shape. No idea how it will eat but it will have to be cut up and used in a Stroganoff or similar as there's no way it will cook evenly in the whole. One geat and two meh out of the three purchases means this isn't something I'd go for again.
Fantastic fillet steak
yes, it's expensive, but the steaks are huge, so if you buy tow on a discount you can feed four. They have a fantastic flavour.
