Fillet steak: A celebration of laziness. This is the muscle that does the least amount of work, resulting in luxuriously tender steak.
We recommend: Medium rare
“Excuse me while I get moist-eyed: Hawksmoor filled a yawning gap in our culinary life. One of my favourite restaurants of the last 10 years.” Jay Rayner, Observer
The key to great steak is happy cattle. Since we opened our first restaurant in 2006, we’ve been working with passionate farmers across Britain doing things the old-fashioned way. Slowly, carefully, always focusing on the health and happiness of the animals and the land on which they graze. We believe that animal welfare, sustainable farming and supporting independent farmers are not just the right thing to do – they’re as close as you can get to a guarantee of great tasting beef.
From our network of passionate farmers this traditional breed British beef is exactly the same as we serve in our restaurants in London, Manchester and Edinburgh.
Beef, salt, heat. When it’s as simple as that the beef really has to be the best there is.
“Flawless. The best steak you’ll find anywhere.” Giles Coren, The Times"

lovely but way too expensive.
very tender, and tasty but ocados own fillet steak is just as nice at half the price. i wont be buying hawksmoor again unless its on special offer.
Do not be fooled by the fancy packaging. This steak is terrible quality and has fat running through it, and purple collagen and tissue all over it. They package it to hide this until you have opened it. I've had much better quality for a 1/4 of the price Absolute con
Couldnt fault this cut - deliciously tender, super tasty, divine and better than our local butcher - which I had thought couldnt be beaten, I was wrong. Ordered again.
absolutely not centre cut.
ordered 2 for a celebration meal. Received 2 tail ends. Not acceptable at all and not at all like what's pictured. Really Hawksmoor ? Do better.
Really fed up with the butchery
There's no doubt that this is quality beef. However, I'm consistently challenged when I'm cooking more than one steak, as no two pieces are the same, it makes consistent cooking of steaks a challenge. Today though, ensures I will never buy it again.... I've got a tail piece of steak about 6 inches long, twice as fat at one end than the other.....how am I meant to get that whole piece medium rare? Never again..... back to the butcher!
Started well but recently appalling
Have been buying these for a few weeks as I don't mind paying for good fillet steak. The first couple of times they were very good so kept ordering. However, the quality then went down drastically. Some have had connective tissue and excess tough fat. The last two times they have been badly cut in a weird shape that makes cutting into steaks difficult. The last time was the last straw - it had been cut with the grain and was a very lumpy shape so was impossible to cut into two steaks. It was also riddled with tough fat and was very chewy. As I said, I do not mind paying for good fillet and at first I thought I had found such. However, the quality is far too variable to justify the high price. At this price (£85 per Kg - twice the price of M&S fillet) it needs to be perfect and it is far from that.
