Storage
Keep refrigerated below 5ºC. Ideal for freezing. Freeze on day of purchase and use within one month. Do not refreeze once defrosted.
Preparation and Usage
Preparation & Use
Remove from packaging, pat the skin dry and allow to come to room temperature. Score the skin if not already done. Generously rub salt into the skin.
To roast: Preheat oven to 220°C (fan 200°C). Roast for 25–30 minutes to crisp the skin, then reduce temperature to 160°C (fan 140°C) and cook for a further 25 minutes per 500g, plus 20 minutes. Baste occasionally during cooking. Rest for 10–15 minutes before carving.
Serving suggestions:
• Serve with seasonal veg, roast potatoes and apple sauce for a classic roast
• Shred leftovers into tacos with slaw and chipotle mayo
• Slice cold for sandwiches with chutney and salad leaves
