A twist of this, a splash of that...
Just down the road from our Rabot Estate cacao farm in Saint Lucia, you'll find the distillery of the very rum we use in our Mojito chocolate. Much like the traditional cocktail, we soothe the fiery nature of the golden liquor with cooling garden mint - long revered for its freshness, the ancient Greeks would rub the herb on their tables to provide a welcoming aroma for guests.

In a traditional Dark and Stormy cocktail you'll find ginger beer, but for our recipe, we switched it up with ginger liqueur for an added glimmer of warmth. One of the oldest spices on record, this time-honoured, punchy root required a chocolate grade with equal intensity, and we had just the thing: our signature 70% dark.

To 'e' or not to 'e'? Whisky is the preferred spelling in Scotland, Canada and Japan, while whiskey is common in Ireland and the United States.
For our Whisky truffles we've chosen a Scottish 12-year-old single malt for its well-rounded and complex flavour profile, mellowed with our 50% milk.
