Thai chilli basil stir fry
Feeds two in 20 minutes (Pad Kra Pao)
You'll need
- 1 pot Thai Chilli Basil paste
-1 1/2 tbsp Vegetable oil (20g)
- 1 tbsp Soy sauce (15g)
- 1 1/2 tbsp Oyster sauce (25g)
- 250g Minced pork/chicken/tofu
- 100g Green beans, chopped
- 1 Red onion (100g), thinly sliced
- 1 Bunch basil, torn (holy, Italian or Thai)
- 2 Crispy fried eggs with runny yolks
Steps
1. Heat the oil on low. Add the frozen paste and cook for 2-3 mins, until melted and sizzling.
2. Add the minced meat/tofu & cook on medium-high for 3 mins.
3. Add the green beans and cook for 2 mins.
4. Add the red onion & cook for 3-4 mins until the meat is done.
5. Stir in the soy and oyster sauces and cook for 30 secs, then turn off the heat.
6. Stir through the basil & serve with steamed jasmine rice and a crispy fried egg each.
Top tips
- Holy basil is traditional; Italian basil is the closest substitute, but Thai basil works too.
- Adjust the soy and oyster sauces to taste - they provide all the salt in the dish.
