Our Thai Massaman Curry
Feeds two in 30 minutes
You'll need
- 1 pot Thai curry paste
- 1 tbsp vegetable oil
- 200g sliced chicken/beef steak/tofu cubes
- 1 x 400ml can coconut milk - preferably organic
- 1/2 brown onion
- 160g Maris Piper potatoes (peeled, 1/2 inch cubes)

Steps
1. Fry the paste straight from frozen for 3-4 mins on a low heat, stirring frequently.
2. Add the coconut milk and bring to a simmer. Cook for 10-12 mins to develop the flavours.
3. Add the potatoes & onions, and simmer for 12 mins. Add a splash of water if necessary.
4. Add the protein & cook for 5-7 mins until meat (if using) is done.
5. Serve with rice. Optional garnish - crushed peanuts & sliced red chilli.
