Pet Nat is a natural, sparkling wine produced using the Méthode Ancestrale, a method where the first fermentation is stopped before completion and sealed. trapping the CO2 and creating natural bubbles. The key difference is that the wine is bottled while still fermenting, trapping the resulting CO2 and creating natural bubbles. This process results in a wine that is typically unfiltered, unadulterated, and has a characteristic cloudy appearance that can develop further in flavour and appearance once opened.
