Vinification details


Each grape variety is vinified separately, beginning with destemming and pneumatic direct pressing. Fermentation occurs over 3 weeks at a maximum temperature of 16°C with selected yeasts. Towards the end of fermentation, the wine is racked to retain only the fine lees and preserve the fruity aromas. It is then aged on lees with regular stirring for 40 days in epoxy-coated cement vats.
