| Night Harvesting & Gentle Pressing: Grapes are harvested at night to preserve freshness and aromatic potential, benefiting from naturally cooler temperatures. They are then gently pressed in a pneumatic press. Fermentation & Maturation: The resulting juice is coldsettled to achieve exceptional clarity before undergoing a long, cool fermentation in stainless steel. After alcoholic fermentation is complete, the wine is racked, lightly sulphited, and aged on its very fine lees in stainless steel tanks to enhance texture and complexity. |
