6 Jus-Rol™ filo pastry sheets, unwrapped and covered with a damp tea towel
250g Ricotta cheese
50g Ground almonds
25g Citrus peel, chopped
1 Tsp caster sugar
1 Tsp orange zest, grated
100g Butter, melted
Icing sugar to dust
Method
1 Preheat the oven to 180°C (160°C in a fan oven) Gas mark 4.
2 Place the ricotta cheese in a bowl with the almonds, citrus peel, sugar and zest. Mix together until evenly blended.
3 Place 6 sheets of filo pastry on a board. Cut into a rectangle 40cm x 20cm (8inx 16 in) then cut in half across the width, to make 20 cn (8 in) squares. Cover with a damp tea towel.
4 Lay 2 filo squares on the board, brush with melted butter and lay the second sheet on top, brushing well with butter.
5 Divide the filling into 6 portions and place
One portion in the centre of the pastry. Draw all the corners into the centre including the sides, to create a purse shape. Press well together to seal. Open out the top leaves of pastry and brush all over with butter. Place on the buttered baking tray.
6 Repeat to make 5 more purses, space evenly apart on the baking tray and bake in the preheated oven for 15 minutes or until golden brown. Make sure the tops do not over brown.
7 Cool on a wire rack and dust with icing sugar.
