Miso, Soy & Honey Roast Aubergines
serves 4
Prep time 10 mins. Cook time: 20 mins
Ingredients
2 medium aubergines
4 tsp white miso paste
2 tsp runny honey
1 tbsp Kikkoman Naturally Brewed Soy Sauce
1 tsp toasted sesame oil
Thumb-sized piece root ginger, peeled and grated
1 clove garlic, peeled and crushed
4 spring onions, shredded
2 tsp sesame seeds
Preheat the oven to 180°C.
Slice the aubergines in half length-ways and score the flesh in a diamond pattern, taking care not to cut through the skin. Line a baking dish with grease-proof paper and lay the aubergines on top, cut sides up.
Mix the miso, honey, soy sauce, sesame oil, ginger and garlic with 2-3 tablespoons of water to make a smooth paste. Brush over the aubergine flesh and roast for 20 minutes until golden brown and soft. Sprinkle with the spring onions and sesame seeds, then serve.

Soy & Honey Chicken Wings

Prep: 5 mins. Marinate: 2 hours Cook time: 25 mins
Ingredients
500g chicken wings
3 tbsp Kikkoman Naturally Brewed Soy Sauce
3 tbsp honey
In a large bowl, mix the Kikkoman soy sauce and honey to make the marinade.
Add the chicken wings and toss to coat evenly in the marinade. Cover with cling film and refrigerate for at least two hours, or overnight if possible.
Preheat the oven to 200˚C/180˚C fan/gas mark 5. Spread the wings out onto a baking tray and cook in the oven for 25 minutes, tossing occasionally, or until cooked through. Finish on a BBQ if you wish or serve straight away.

Herby Soy Marinated Steaks
serves 3

Ingredients
2 sirloin steaks (150 g each)
60ml Kikkoman Soy Sauce
1 tablespoon lemon juice
1 fresh rosemary sprig
2 fresh thyme sprigs
½ bunch parsley
1 teaspoon mustard
2 cloves garlic
Pepper to taste
3 tablespoons olive oil
1. Place all marinade ingredients (everything except steak) in a mixing bowl and thoroughly whizz using a blender.
2. Cover the meat with blended marinade and put it in the fridge for 30 minutes.
3. After this time remove excess marinade from the meat and bbq/ grill the steaks on a preheated high temperature surface for 2 to 5 minutes on each side, according to taste.

Sticky Chicken Breast in Orange, Chilli, Honey & Soy Marinade
Serves 4

Ingredients
4 chicken breasts
2 chilli peppers, deseeded and thinly sliced
3 oranges (2 juiced and 1 sliced)
3 tbsp honey
3 tbsp Kikkoman Soy Sauce
1 tsp paprika
1. Squeeze the juice of 2 oranges into a pan and heat. Add the chilli and reduce ⅔ of the liquid.
2. Mix honey with Kikkoman soy sauce and paprika and add to the orange-chilli mixture. Remove from heat and leave to get cold.
3. Put the chicken in the marinade and let them steep for about 2 hours in the fridge. Grill or barbecue the marinated chicken, continuing to brush on more marinade as it cooks.
4. Arrange the finished chicken breast on plates and garnish with orange slices.

Potato Salad with Fried Capers
serves 2

Ingredients
500 g baked baby potatoes
1 red onion
2 tbsp capers
frying oil
Half bunch chives
Dressing:
1 tsp wholegrain French mustard
2 tbsp mayonnaise
2 tbsp Kikkoman Naturally Brewed Soy Sauce
1 clove garlic
1 sprig fresh rosemary
salt and pepper to taste
Cut the potatoes in half and place in a bowl. Cut the onion into thin half moons and add to the potatoes.
In a separate bowl mix mayonnaise with Kikkoman Soy Sauce and mustard. Add garlic crushed by a garlic press and finely chopped rosemary.
Toss the dressing with the potatoes and the onion.
Heat the oil in a frying pan. Drain the capers well on a paper towel. Place them in the pan and fry until crispy. After frying, again drain thoroughly on a paper towel.
Sprinkle the potatoes with fried capers and chopped chives.
