Green Vegetable Risotto
Ingredients:
2 tbsp olive oil
1 onion, chopped
1 clove garlic, crushed
115g mushrooms, sliced
175g Arborio rice
250ml dry white wine
1 Knorr Vegetable Stock Pot
115g peas
115g spinach, chopped
55g Parmesan cheese, grated
55g pine nuts, toasted
Preparation Time: 10 mins Cooking Time: 20-25 mins
Servings: 4
Heat the oil in a pan and sauté the onion until soft. Add the garlic and mushrooms and sauté 1-2 mins. Add the rice and stir well to coat. Add the wine and the gradually add the Knorr Vegetable Stock Pot dissolved in 500ml boiling water. Stir well in between each addition of stock and continue until stock has been used. Add the peas and spinach. Stir until liquid is almost all absorbed, and serve with the Parmesan and the pine nuts.
