Whole grapes are gently pressed and the juice, or must, is transferred to temperature-controlled tanks for fermentation. The winemaker freezes the Prosecco must prior to fermentation to ensure maximum freshness upon bottling. Keeping the temperatures low enhances the vibrant fruit aromas in the wine.
