Preparation and Usage
How to make atta (flatbread dough)
Atta is a blend of white flour used in the basic dough needed for making various kinds of roti, commonly called chapati. For the perfect roti:
1 You will need: 500g medium atta, optional - pinch of salt, 470ml of warm water, 3 tbsp vegetable oil, skillet or tava for cooking roti, rolling pin.
2 Mix flour and salt (optional) together in a bowl. Add vegetable oil and stir. Gently add water, continually mixing until a semi soft dough. Cover with a moist cloth and rest for 10 minutes.
3 Make small balls, slightly smaller than an egg in size. Flatten and roll on dry flour with a rolling pin. It should be 4-5 mm thick and 6-8 inches in diameter and round in shape.
4 Cook in a preheated skillet, tava or a griddle until golden brown on both sides. Serve with a knob of butter.
