Vinification details
The grapes are picked by hand throughout September and October before being left to dry on rack in drying stores for 4 months. This concentrates the flavours and sugars before the grapes are destemmed for fermentation and 30 day maceration. The wine then spends 24 months in barrel and 6 months in bottle before release.
