London Apron Vanilla Plant Based Meringues

Unrefined sugar and aquafaba create the light and airy meringue consistency, while vanilla extract adds a luxuriously indulgent flavour. (Honestly, it’s pretty much magic.)

Make a delightful ‘Vegan Eton Mess’ by serving with fresh strawberries and coconut cream. To make coconut cream, refrigerate a can of coconut milk overnight then scoop out the cream. Beat with three tablespoons of sugar until soft peaks form. Serve with strawberries and plenty of London Apron plant-based meringues.
