Our dairy cows are cared for to the highest welfare standards, spending on average 180 days grazing outside each year - the rest of the time, like people, they prefer to avoid the rain! We only source milk locally, from three designated Stilton® counties, cutting down our road miles.

Simple Pasta Dish
Serves 4
Ingredients
400g penne pasta
25g butter
1 onion, thinly sliced
1 garlic clove, crushed
1 tbsp fresh chopped sage, or 1 tsp dried
100g 1912 Stilton®, crumbled
Handful walnuts, chopped and toasted
Method
1. Boil the pasta according to pack instructions.
2. In a saucepan, melt the butter, then gently fry the onion until golden. Add the garlic and sage, fry for a further two minutes, then remove the pan from the heat.
3. Drain the pasta and reserve some cooking water.
4. Stir through the buttery onions, 1912 Stilton® and 2 tbsp of the cooking water. Sprinkle with the toasted walnuts to serve.
