Korean dumplings with a chicken and tangy kimchi filling. The chicken provides a mild and tender texture, while the kimchi adds a burst of umami, along with its signature tanginess and heat. Enjoy with your favourite dipping sauce or serve with a hot and sweet gochujang coleslaw. For a simple homemade dipping sauce combine a mixture of soy sauce, rice vinegar, sesame oil, and sometimes a touch of sugar or honey for sweetness.

Preparation and Usage
Simply Steam:
1. Line a steamer (or a colander / sieve) with baking paper and place over a pan of boiling water on a medium heat.
2. Add the dumplings and cover with a lid. Steam for 7 minutes. Enjoy!
Pan fry and Steam:
1. Add 1 tbsp (15 ml) of oil and 2 tbsp (30 ml) of water to a non-stick pan. (Layer the pan with baking paper first for the best finish).
2. Add the dumplings to the pan and heat until the water starts to boil.
3. Cover with a lid and continue to cook for 3 minutes.
4. Remove the lid and allow the remaining water to evaporate.
6. Turn the heat down and continue to fry until the bottoms are golden and crunchy. Enjoy!
Airfrying:
1. Add water (approx. 100ml) into the base of the air fryer.
2. Pre-heat to 180°C. Spray oil onto the rack before adding dumplings. Distribute the dumplings evenly and spray with oil.
3. Heat for 8 minutes. Enjoy!

The origin of dumplings is still debated, but they were already popular in the Far East as early as the 2nd century. As they travelled west along the Silk Road, they were adopted and transformed by many different cultures. Today, dumplings are enjoyed in an incredible variety of tastes and styles, each one reflecting the unique character of the people and places that created them.
Mandu family recipes are passed down through generations of Korean families. Legend has it that this popular Korean food cannot be made well without the love in a mother's hands.

Recipes
Hot & sweet gochujang coleslaw
Ingredients
200 g crunchy coleslaw mix (shredded white/red cabbage and grated carrots)
2 tbsp lime juice or rice vinegar
1/2 tbsp sesame oil
2 tbsp water
1/2 tbsp gochujang (Korean red pepper paste)
1 tbsp honey
2 tbsp mayonnaise (preferably Kewpie's)
1 clove of garlic, chopped
Pinch of salt
Handful of roughly chopped coriander
Prep Time: 10 minutes
Serves 2
Method
- In a large mixing bowl add the chopped garlic, gochujang, honey, mayonnaise, water and lime juice (or vinegar) and mix together.
- Whisk in the sesame oil gradually so the ingredients emulsify.
- Add the coleslaw mix and stir well.
- Add salt to taste, and garnish with chopped coriander.
- Set in the fridge for 30 minutes before serving.
Or make your own dipping sauce by mixing together:
- 2 tbsp light soy sauce
- 1 tbsp rice vinegar (or balsamic vinegar)
- 1/2 tbsp chilli oil (optional, for an extra kick)
Serve with Chicken & Kimchi Mandu (steamed as per the cooking instructions). Enjoy!
