History
Cantina Montelliana was established in 1957 and is a cooperative of 400 local vine growers. They cover 700 hectares, producing DOC and DOCG wines from the heart of the Prosecco region along with other sparkling white wines.

Ginger Sparkle Prosecco

Ingredients
1tbsp of demerara sugar
0.25tsp of edible gold glitter
300ml of prosecco
0.5 lemon, juiced
40ml of ginger cordial
Method
Step 1
Add the demerara sugar and edible glitter to a small saucer, then mix together to combine.
Step 2
Dip the edges of the rim of two champagne flutes in lemon juice. Then dip the rim into the glitter sugar mixture, twisting the glass gently until the whole rim is covered.
Step 3
Add the ginger cordial to the flutes and top with prosecco.

Regional information
Located in the foothills of the area stretching from Montello to the Asolo hill area, Montelliana's growers have the ideal soil and climate for growing grapes. These are located at between 120 and 250 meters above sea level, with subsoil in the area providing excellent drainage of rainwater.

Vinification details
The grapes are softly pressed to obtain the must, which is then refrigerated and filtered in stainless steel tanks to retain the freshness.
Fermentation is undertaken in temperature controlled conditions.
Once the initial fermentation has been completed, the wine is then stabilised and undergoes secondary fermentation using the Charmat method.
