A dry style of Chardonnay grown in the Crouch Valley in Essex and vinified by Lyme Bay Winery. It is a crisp and fresh style with minimal oak aging to add complexity. Perfect served with seafood or white meat dishes and salads.

Lyme Bay

James Lambert

Fermented in a mix of stainless steel and oak at cool temperatures using selected Burgundy yeast strains to enhance complexity. Malolactic fermentation followed as well as extended fine lees ageing with some bâtonnage to accentuate the natural weight.
