History

Lyme Bay was set up by Nigel Howard in 1993 in Devon with the ambition of making high-quality cider. His interest in winemaking encouraged him to expand his venture 16 years later. Today, under the leadership of MD James Lambert, Lyme Bay has long-standing partnerships with some of the UK's best grape growers, sourcing grapes from 5 areas across the south of England and producing award winning wines year on year.

The Crouch Valley in Essex is swiftly becoming one of the best regions in the UK for producing still wines. It is one of the driest and warmest parts of the UK and its clay-based soils and proximity to the River Crouch make it a superb area for grape growing.

Vinification details

Fermented in a mix of stainless steel and oak at cool temperatures using selected Burgundy yeast strains to enhance complexity. Malolactic fermentation followed as well as extended fine lees ageing with some bâtonnage to accentuate the natural weight.
