Preparation and Usage
Carving
For best results, carve thinly using a sharp knife.
1. Secure a large chopping board by placing on top of a damp cloth.
2. Transfer the steak onto the chopping board.
3. Remove meat from the bone by holding the bone in one hand, and slice along its length to cut the meat away from the bone.
4. Secure the steak by pushing the fork through the centre of the steak and hold firmly.
5. Slice the meat across the grain into 5mm slices using a sharp knife.
6. Only carve as many slices as required to preserve the succulence and tenderness of the steak.
7. Drizzle the remaining juices over the steak.

Do not reheat.; Oven cook - From Chilled. Electric 200°C, Fan 180°C, Gas 6
Transfer steak and juices to a roasting tray and place into the centre of the oven, cook for:
Rare: 25-30 mins
Medium: 30-35 mins
Well done: 40-45 mins
Add the butter and herbs for the last 5 mins, basting frequently.
Remove from oven and rest for 10 mins before carving. Drizzle the remaining juices over the carved steak.; Shallow Fry - From Chilled. 4 mins
Remove all packaging (including absorbent pad) 15 mins before cooking. Remove butter and herbs and place to one I side. Preheat oven. For best results use a large cast iron griddle pan. Preheat dry pan to high heat, until smoking hot. Rub 1 tbsp of oil onto the meat and season generously with sea salt and cracked black pepper. Cover exposed bone with foil. Place steak into pan sealing each side of the meat for 2 mins until golden brown
