Lemon Tart
4 Eggs
115g Caster Sugar
120ml Double Cream
2 Lemons

To Prepare The Tart
Beat together the eggs, caster sugar, double cream and juice and zest of 2 lemons. Place pastry case on a baking tray and pour the lemon mixture into the pastry case. Bake for 30-35 min until just set. Leave to cool and serve at room temperature or chilled.
